This week on Barber and Haskill's Kitchen we decided to tackle school lunches. In this recipe we make puff pastry pinwheels, which incorporate all your favourite sandwich or pizza toppings into one small, delicious puff pastry.

Pizza Pinwheel
Ingredients:
1. One roll of puff pastry
2. Pizza Sauce
3. 1 Package of Pizza (Mozzarella Cheese) Shredded
4. Favourite Meat Topping (I chose prepackaged charcuterie meats but pepperoni will probably be the most common choice)
Preparation:
1.Defrost your puff pastry until it reaches room temperature.

2. Lay a large piece of plastic wrap on your counter or cutting board, I had to put two together to make it wide enough. Unfold the first sheet of puff pastry in the center of the plastic then roll out any bumps with a rolling pin.Â

3. Spread with a generous amount of pizza sauce, leaving a 1/2-inch border on all sides. .Â

4. Lay out all your meats so there is a single layer covering the entire sauced part of the pastry.

5. Cover the meat layer with a single layer of shredded cheese.
Â
6.Starting at the long (12-inch) edge, roll the puff pastry into a log. Tightly wrap the log with the plastic wrap. Place in the refrigerator for 20 minutes. Repeat with the second sheet of puff pastry. Preheat your oven to 375 degrees F and line two baking sheets with parchment paper.

7.Once the log has chilled, using a sharp, serrated knife, carefully cut each log into 1/2-inch-wide slices. Arrange the rolls 1 inch apart on the prepared baking sheets. Bake until the puff pastry is light golden brown and the cheese is hot and bubbly, about 18 minutes. Let cool slightly. Serve warm or at room temperature.
